What I Eat in a Day
My name is Chiara, I am Italian and I have been in Shanghai since 2004 with my husband and my two 10 years old twin daughters, I am a Wellness Coach, a Pilates Instructor and a Yoga Teacher.
Here is an example of what I eat in a day, following a plant based diet!
I drink warm water with lemon first thing an the morning, later I have fruits and nuts for breakfast, this is banana, cashews, vanilla cream topped with mulberry, banana, dates, goji berry, cashews, walnuts and chia seeds, a superfood meal that can support me for may hours.
For lunch I have black rice with sauerkraut, homemade chickpeas hummus and celery sticks.
My snack is coconut water with raw vegan pea protein powder, Chinese dates, coconut and cacao nibs.
My dinner is: millet with red lentils and sesame seeds, a colorful fresh salad, asparagus with nutritional yeast, mushrooms with thyme and turmeric, green beans with miso sauce.
During the day I drink a lot of water and sometimes herbal tea with turmeric, ginger or peppermint.
That is a day in my life.
